Mr. Takeshi Matsumoto is the president of Yakko Dining (BEEF KITCHEN STAND). His family owns a chain of sushi and Japanese food restaurants in Yokohama that has been in operation for eight decades. Having trained at renowned sushi restaurants in Tokyo since he was eighteen, he has a true culinary background. Now forty-four, he oversees twenty restaurants in Tokyo, Kanagawa, and other places. He began creating a ramen meal that combines Japanese beef, sukiyaki, and ramen after receiving a lot of requests from people traveling from abroad. He eventually finished a bowl of ramen that was truly exceptional after going to ramen schools and doing numerous trial tastings. The great range of tastes that are available when ordering raw eggs or rice to go with the wagyu sukiyaki ramen is another characteristic of the dish. I asked him what he found most challenging. “Because we were so focused on quality, it took a year from conception to commercialization,” he responded. “Which of your customers’ comments has been the best?” We asked. “This is the best ramen I’ve ever had!
