Blueberry Orange Bread
Ingredients:
1 Blueberry Muffin Mix Box
2 eggs
1/3 cup oil
1 cup liquid
1 tbsp orange zest
1/2 cup of fresh blueberries
1 orange’s juice
1 cup of sugar powder
Extra orange zest for topping
Directions:
Mix the muffin mix, 2 eggs, oil, water, and orange zest together to make the bread. Add the fresh blueberries and mix. Pour the batter into a loaf pan that has been greased. Add a few more fresh blueberries to the loaf’s top. Bake at 375 for 50-60 minutes. If the top starts to get too brown in the last 20 minutes, cover it with foil.
Mix the orange juice and powdered sugar together to make the glaze. Add more powdered sugar or juice until the consistency is how you want it. Pour the glaze over the blueberry orange bread that has cooled. Add more orange zest on top, and enjoy!

Blueberry Muffin Donuts
To make the donuts:
1 box of muffin mix from Lehi Mills
2 eggs
¼ cup oil
1 cup liquid
Butter or cooking spray
Follow the steps on the back of the box to make the batter. If you want to change things up, add the zest of a lemon or orange. Pour the batter into a plastic bag and cut off one corner with scissors once it is all mixed. Grease the donut pan a lot. Put a little bit of batter in the pan using a pipette. If you put more than 1/3 of the batter into each donut slot, the donuts will rise too much and lose their shape. Bake at 375 for 15 minutes. The sides should be golden brown and crispy, and the top will be much lighter. That’s fine because you’re going to put the glaze on that side anyway.
For the icing:
1 cup of sugar powder
1 teaspoon vanilla extract
2 spoons of water
In a bowl, mix together powdered sugar, vanilla, and water. Whisk until the mixture is smooth. The glaze needs to be clear. If there is too much liquid, add more powdered sugar. Dip each donut’s light side in the glaze. Place on a rack for drying.
